Curry Beef Lumpia (Martabak Telur)
Ingredients:
- 1 pound Ground Beef 8 Eggs, loosely whisked
- 1 package Lumpia Wraps
- 2 tbsp Extra Virgin Olive oil, cooking Oil for deep frying
- 3 cups chopped Green Onions
- 1 cup diced onion
- 1 tbsp minced garlic
- 1 tbsp oyster sauce (optional)
- 1 tbsp Curry powder
- 1 tbsp chicken powder
- Salt & pepper
How to Cook
Brown the ground beef, drain, and set aside. Heat some olive oil in a wok or pan, then sauté the onion and garlic until fragrant. Add the ground beef and season with salt, pepper, chicken powder, and curry powder. Add some oyster sauce. Make a well in the middle of the ground beef and pour some olive oil. Pour in the egg gradually and scramble the egg. Mix until the egg is incorporated. Taste and add some more seasonings if necessary. While we wait for the meat filler to cool, chop green onions and start peeling the lumpia wrap. (When we bought frozen lumpia wraps, it was stuck together, so we had to carefully peel them.) Mix the cooled ground meat with green onions and put two spoonfuls of the mixture in the corner of the lumpia wrap, roll it once, and fold the sides like you fold an envelope. Glue the tip using egg whites. Deep fry the lumpia in hot oil until golden brown. Served with sweet chili sauce and pickled cucumber.
Pickled Cucumber
- 2 medium cucumbers, diced
- 1 carrot, diced
- 1/2 red onion, diced (optional)
- 2 tbsp sugar
- 1 cup distilled vinegar
- 1/2 tsp salt
Mix everything and chill for at least one hour.
