Bellingham sweet shop captures London charm with bubble waffles, candy

Inspired by a UK trip, Love From London is an immersive London-themed shop full of delicious treats. #k5evening

BELLINGHAM, Wash. — Step inside Love From London and you are immediately met by a life-sized London guard, a red telephone box and a mural of the city with a working clock on the Tower of London — set to London time, of course.

You'll also notice one of the most delicious smells known to mankind: Bubble waffles. The shop is inspired by a six-week vacation Ryen Frydenberg and his son Theo took to Scotland and London, where they fell in love with bubble waffle,s which first made a splash decades ago in Hong Kong.

"We actually had it in Chinatown in London and basically they use a certain kind of griddle to be able to cook this bubble waffle. It's a little bit different batter, different texture," Frydenberg said.

Executive chef Casey Shyer, who came up with the recipe, said bubble waffles are just plain fun.

"You can just kind of eat a bite of ice cream and eat a bubble at a time," Shyer said. "And a bite in a bubble is what I like to say."

One of the top sellers is the Berry Brawley — a vanilla-based bubble waffle with raspberry chocolate ice cream, topped with fresh raspberries and strawberries and Oreo. Then a drizzle of chocolate syrup followed by a blizzard of powdered sugar.

Another favorite is the British Bonfire.

"It's kind of more of a campfire bubble waffle," Frydenberg said. "We use vanilla ice cream, marshmallows, graham cracker and an Aero chocolate bar. And we put that all together with some toppings, some sauces and people just seem to love it."

There are 20 different kinds of British candies and traditional British beverages for sale. The shop also has thick milkshakes with vegan options available.

Love From London is open Wednesday through Sunday.
